Mega Corn Bread Spinach - Leek Dip

Original Ranger Cookies
*Blend
together: 1 cup
shortning 1 cup brown
sugar
1
cup white sugar
*Add & Blend: 2 eggs 2 cups
flour 2 cups corn flakes
2
cups oatmeal 2 tsp. soda 1/2 tsp. salt
1
tsp. baking powder 1 tsp. vanilla
Optional additions (all or some):
1
cup coconut
1
cup chopped nuts (pecans are best)
1
cup raison
Mix
thoroughly, batter will be stiff, make round balls
the
size of quarters and roll in granulated sugar,
put
on cookie sheet and press with a fork.
Bake at 350° for 8 to 10 minutes.
Cool slightly on sheet before removing. Makes 3 dozen cookies.

mix.
2 eggs
1 can (drained well) corn
1 can green chili's
1/2 cup chopped onions
1/2 cup red bell pepper
1/2 cup mayonaise
Grease 8 x 8 400 degrees 25 minutes

Put into a hollowed out rye bread (round
if possible)
1 cup sour cream
1 cup mayonaise
1 knorr leek soup mix
1 can water chestnuts (cup up)
1 frozen chopped spinach (drained)
Mix together - used bread from center of
hollowed out rye for dipping
Place hollowed bread on platter, surround
with bread pieces on plate
fill hollow with dip.....looks great,
tastes great.....can add sprig of
parsley for decoration.

Coleslaw •1 Head cabbage -- finely chop •1 medium Carrot -- shredded •1/3 cup Granulated sugar •1/2 teaspoon Salt •1/8 teaspoon Pepper •1/4 cup Milk •1/2 cup Mayonnaise •1/4 cup Buttermilk •1 1/2 tablespoons White vinegar •2 1/2 tablespoons Lemon juice Be sure the cabbage and carrots are chopped up into very fine pieces about the size of rice kernels. Combine the sugar, salt, pepper, milk, mayonnaise, buttermilk, vinegar and lemon juice and beat until smooth. Add the cabbage and carrots and mix well. Cover and refrigerate for at least 2 hours before serving. Serves approx. 6 persons. ------------------------------------------------------------ KFC Biscuits •2 cups Self-rising flour •1 tablespoon Sugar •1 cup Milk •1/3 cup Mayo Combine flour, sugar, milk and mayo into smooth dough. Divide batter equally between 10 paper-lined cupcake wells and bake 350~ about 30 minutes or until golden brown. ------------------------------------------------------------ KFC Buttermilk Biscuits •1/2 cup Butter •2 1/2 tablespoons Granulated sugar •1 Egg -- beaten •3/4 cup Buttermilk •1/4 cup Club soda •1 teaspoon Salt •5 cups Bisquick biscuit mix Preheat oven to 450~. Combine all of the ingredients and knead by hand until smooth. Flour your hands, pat the dough flat to 3/4 inch thickness on waxed paper and punch out biscuits with a biscuit cutter. Bake on greased sheet for 12 minutes or until golden brown. ------------------------------------------------------------------------ KFC Fried Chicken •1 Broiler-fryer -- cut up •3 cups Water •1 tablespoon Salt •2 teaspoons Fines herbs •2 teaspoons Onion powder •2 packages Instant chicken broth •2 teaspoons Seasoned salt •1/4 teaspoon Seasoned pepper •1 cup Flour Cover chicken with mixture of water and salt. Chill in bowl for at least 1 hr. Whirl herbs; onion powder, seasoned salt, instant chicken broth, and pepper in blender. Combine with flour mixture while still wet until thickly coated with flour. Melt enough shortening or salad oil to make 1" depth large skillet. Heat to 375. Fry chicken pieces, turning once, 5 min. on each side. Lift, drain on paper towels. When pieces are fried, drain fat from skillet. Add one cup chicken broth to skillet, add chicken pieces, cover skillet. Cook 15 min. or until fork tender. This is a recipe entitled "Marie Walsh's Kentucky Fried Chicken". ------------------------------------------------------------------------ KFC Macaroni/potato Salad DRESSING MIXTURE •1/2 cup Sour cream •1/2 cup Miracle whip •1 cup Hellman's mayo •2 tablespoons Prepared mustard •3 tablespoons Sugar •1 teaspoon Onion salt •1/2 teaspoon Pepper SALAD •2 tablespoons Dry minced onion •2/3 cup Celery -- chopped •2/3 cup Sweet midget pickles -- chop not use relish •2 tablespoons Pimiento -- chopped or •1/2 small Tomato; seed -- chop •8 cups Elbow macaroni; cook, drain -- cool well before add DRESSING-Combine dressing ingredients and set aside. MACARONI SALAD- Combine remaining ingredients in large bowl. Coat well with the dressing. Refrigerate at least an hour before serving. POTATO SALAD-Substitute 8 c cooked, peeled, cubed cold potatoes for the macaroni. Increase the celery to 1 cup and substitute snipped green onions for the dried. Can add 1 c of pitted black and/or stuffed green olives in either salad. -------------------------------------------------------------------- KFC Original Recipe Fried Chicken •6 cups Crisco cooking oil •1 Egg -- beaten •2 cups Milk •2 cups All purpose flour •4 tablespoons Salt •2 teaspoons Black pepper •1 teaspoon Monosodium glutamate -- OR - you can use Accent flavor - enhancer •1 Frying chickens; with skin - each cut into 6 pieces Pour the oil into the pressure cooker and heat over medium heat to about 400~. In a small bowl combine the egg and milk. In a separate bowl, combine the remaining 4 dry ingredients. Dip each piece of chicken into the milk until fully moistened. Roll the moistened chicken in the flour mixture until completely coated. In groups of four or five drop the covered chicken pieces into the oil and lock the lid into place. When the steam begins shooting through the pressure release set the timer for 10 minutes. After 10 minutes release the pressure and remove the chicken to paper towels or a metal rack to drain. Repeat with the remaining chicken. |
